I can’t wait for you to try these nutrient dense quick and easy 20 minute beef and rice bowls! They’re great for those nights when you need a nourishing meal, but are too tired or don’t have enough time on your hands. It’s nutrient dense, bursting with flavor and is also great for meal prep. It’s free of all the things you don’t want — soy, refined sugar and gluten-free — but you would never know. They are delicious and so nourishing! 

Ingredients
Rice
1 ½ cups Jasmine Rice, washed
2 tbsp Olive Oil
1 tsp Salt
3 cups Water
Small knob of Butter

Vegetables
1 tbsp Olive Oil
3 Carrots, washed and diced
1 tsp Sesame Oil
1 tsp Herbed Sea Salt (adds so much flavor — linked in my Amazon storefront)
1 tsp Granulated Garlic
Handful of Pea Pods, washed, trimmed and cut in half

Protein
1 lb Grass Fed/ Finished Ground Beef

Sauce
1 tsp Sesame Seeds
1 tsp Herbed Salt
½ tsp Ground Ginger
1 tsp Granulated Garlic
1 cup Coconut Aminos
¼ cup Chicken Bone Broth

Instructions
Wash rice thoroughly in strainer. Add olive oil to a pan over high heat, allowing the pan and oil to get hot.
Add the freshly washed rice (wet and all) to the hot pan with oil. Pan fry for several minutes, stirring frequently with a wooden spoon to avoid clumps or sticking. Sprinkle in salt.

Add 3 cups of water while it’s still on high heat. You want to hear a nice sizzle when you add the water. Immediately stir again to prevent sticking. Stir gently until it boils.Right when it’s about to boil, add a small knob of butter and mix in. After about minute or two, the rice will start to soak in the water.
Mix one more time. You’ll start to see bubbles come up to the top. Turn the heat down to medium-low heat, cover with lid and cook for 15-20~ minutes without touching it again. 

While the rice cooks, dice the carrots and halve the pea pods.
Add your olive oil to the heated pan/skillet, turn on medium high heat and sauté the carrots until they start to get fork tender and lightly browned. Add in the sesame oil, salt, garlic and continue cooking. (This process looks like letting them cook for about minute at a time, and then mixing so they don’t get too browned. Repeat this process on and off for about five minutes.) 

Add pea pods, then mix and cook for about another 30 seconds. The goal is for your carrots and pea pods to be soft while still having a little bit of crunch! Transfer to a bowl and set aside.

Turn on high heat and put ground beef in pan. Chop into tiny little pieces — once minced, let the beef cook in pan without touching or mixing for 6 to 7 minutes. Most of the juices should evaporate and you should have a nice browned crust on the bottom.

Mix and repeat process for another 3 to 4 minutes. While the beef mince is searing, prepare the sauce. Mix together sesame seeds, herbed salt, garlic, and ginger and then whisk in the coconut aminos.

Pour over beef, mix gently, and let caramelize for a minute or two.
Deglaze with chicken broth, mix in veggies, serve over rice and enjoy!
