These blender pancakes are so easy to make. They’re delicious, gluten free, refined sugar free, high protein, nutrient dense and perfect for when you’re craving a sweet treat!

Ingredients
Pancakes
1 cup GF Oats
2 Eggs
½ cup Cottage Cheese
2 tbsp Olive Oil
2 tbsp Maple Syrup
1 tbsp Milk
2 tsp Vanilla Extract
½ tsp Salt
1 tsp Baking Powder
Few tbsp of butter for frying pancakes in

Strawberry Maple Butter
3 tbsp Butter
6-8 large Strawberries, diced
½ cup Maple Syrup
½ tsp Salt

Instructions
Blend pancake ingredients together until creamy.
Heat up butter in pan until slightly browned.
Pour in pancake batter in circles onto hot pan (when the bubbles on top start to pop it’s time to flip)
While you continue building your pancake stack, dice strawberries and set aside.
To make sauce, melt butter in sauce pan. Mix in strawberries and sauté on medium high heat for 5~ minutes. (Don’t skip this step, this is how the strawberry flavor gets infused into the butter!)
Add in salt and maple syrup, bring to a soft boil and then reduce to a simmer for 2 minutes. As you finish making your pancake stack, pour sauce and strawberries on top and enjoy!
